Chocolate Coffee Cake In A Mug (Kill Me Now!)

It is unimaginable that I can do microwave cooking for chocolate-coffee-cake-in-a-mug! The thought itself is crazy. However, for the love of chocolate and coffee, I am always ready and willing to do it.

Total time; 4 minutes

Serves; 1

Standard size coffee mug

A Bowl

Ingredients for the cake;

2 tablespoons almond flour/meal

1 tablespoon grass fed butter, melted (coconut oil or kerrygold butter)

1 heaping tablespoon coconut sugar

1 tablespoon vanilla extract

1 egg, whisked

1 tablespoon coconut flour

¼ teaspoon cinnamon

Pinch of salt

Ingredients for the topping

2 tablespoon grass fed butter, at room temperature

1 tablespoon coconut sugar

¼ teaspoon cinnamon

For the whipped cream

1 (7 ounce) can of full coconut milk

½ teaspoon maple syrup

Instructions:

1. Mix up all cake elements in the stand and mix up well. Ensure the stirring of the ingredients take about four to five seconds. Use the back of the spoon to smoothen mix in the mug.

2. Using the ball, put all topping ingredients in it and mix the ingredients using your hands while pinching the butter and the other ingredients to blend.

3. Add topping ingredients in the coffee mug on top of cake ingredients.

4. Place in a microwave and cook it for 1½ to 2 minutes depending on your microwave and the coffee size used. Please, ensure that you do not overcook because in a microwave spilled food look lousy.

5. Allow the cake to cool down. While cooling, place the solid cream that has hardened at the top of the can in a bowl and fluff up together to maple syrup.

6. Finish off by topping the cake with whipped cream.

7. Then it is ready for serving. Let’s eat it while warm! When it gets cold it loses some taste. Amazing?
